Tiramisu Cake

1: In a mixer bowl, beat eggs with a pinch of salt on medium speed for one minute.

2: Gradually add sugar and vanilla extract and continue beating until light and fluffy.

3: Sift flour, baking powder, and instant coffee into the mixture and gently mix until just combined.

4: Grease two baking pans and line them with parchment paper.

5: Divide the batter between the pans, level with a spatula.

6: Bake in a preheated oven at 180 degrees Celsius for 12 minutes or until lightly browned and soft.

7: Cool the cakes on a rack.

8: Cut the cooled cakes into three rectangles of size 22x22 cm.

9: For the mascarpone cream, mix mascarpone cheese, whipping cream, sugar, and a vanilla bean in a mixer until stable.

10: For the syrup, mix warm water with instant coffee and sugar.

11: To assemble, in a square ring or rectangular mold, place a layer of cake, brush with syrup, and spread a layer of mascarpone cream.

12: Repeat the process until all layers are assembled.

13: Pipe small dots of remaining cream on top.

14: Chill the cake in the refrigerator for at least 1.5 hours.

15: Before serving, dust with cocoa.
